If by bulk you mean batch, surely you could call the Hillshade tool in a
Python script, although I've never tried it:
 
<very much psuedocode>
 
rasters = [list_of_rasters]
for raster in rasters:
    gp.Hillshade_sa( raster, out_raster, azimuth, altitude,
model_shadows, z_factor ) 
 
chad!
