If I understand your question. When you replace the data. You could apply a lyr file to the symbology. All pre-existing values would find their symbology. Any new values would need to be assigned and you would want to remove any unused. Start by saving a lyr file from the current data layer. Hope this is the right vein.

Is there a way to create a sort of symbol template in ArcMap? I will be doing batch well imports into a new feature class once a month and deleting the previous months feature class containing the wells. Each symbol is unique and some have to be built.
