[OKGIS] Subsurface Interpolation

I'm doing point to raster interpolations from monitoring well data, and I'm
trying to interpolate water level elevations and nitrate levels. I've been
using the ArcGIS 3D-Analyst Interpolate to Raster function, but there are
several different methods available for this: IDW, Spline, Krieg and Natural
Neighbor.

>From my testing and reading it looks like the Spline method gives good
results when set to "tension" with 3 sample points.

Has anyone done this type of analysis before and have experienced knowledge
to offer?
